Ensors offers a private animal processing and butchery service to any farm producer who may wish to sell their own Beef, Pork or Lamb direct to customers, either at the farm gate, via local farmers markets or direct to consumers through their own marketing.

This is a professional service which allows you to market your farm meats without having to go to the expense of building your own on farm butchery facility.

Our EC licensed Abattoir and Cutting Plant is fully BRC Global Food Standard accredited and is able to process meat that is:-

  • Farm Assured (FAWL, FABBL, Red Tractor)
  • Organic
  • Freedom Foods
  • BPEX (British Quality Assured Pigs/Pork)
  • PGI Welsh Beef, Lamb
  • EBLEX English Beef, Lamb

Therefore we can accommodate any specialist marketing requirements that your farm business may have.

Our standard private processing service is intended to produce high quality, well presented meat for you to further sell to customers and includes:-

  • Advise on Livestock (if requested)
  • Livestock Slaughter
  • Carcase Butchery (including mincing) to your Specification
  • Vacuum Packing & Labelling of all cuts as required.

Our butchers are specialists at their job and will process your meat to match your exact cutting requirements. Please note: If you simply require the slaughter and basic butchery of a carcase for your own home consumption with basic packing – a discounted rate is available.

Ensors is open 5 days a week for processing. All private processing has to be formally booked in with our Procurement Team who will make every effort to ensure that the Delivery of Livestock and Collection of meat is scheduled to suit your needs.

If transportation is difficult we can even arrange for your livestock to be collected from your holding and the finished meat to be delivered back to you – subject to arrangement and economic viability.

ADDED VALUE PRODUCTS

Ensors are able to produce added value products from your meat if you would like to offer your customers a wider product range than the standard service which includes joints, dice and mince. Our added value products include:-

Sausages – our most popular flavours are:-

  • Traditional Pork Sausage
  • Pork and Apple
  • Pork Leek
  • Cumberland
  • Forest Sausage
  • Other flavours & gluten free sausages are available on request.

Burgers

  • Beef Burgers
  • Lamb & Mint Burgers
  • Pork & Apple Burgers

Please note we have a minimum quantity per flavour of 10Kg/20lb.

Alternatively – we are happy to make meat products using your own seasonings or ingredients provided that they conform to all necessary food safety standards.

Bacon Curing

Our bacon is a semi traditional dry cure and we are able to cure pork cuts for larger bacon joints or slicing it into rashers of bacon if you require.

ADDITIONAL SERVICES

MATURATION
Specialist carcase maturation chillers are available at Ensors in order that meat can be matured either as whole carcases or primal cuts. Please enquire if you wish to have any of your meat matured.

Please note that if you wish to resale mince from your carcase to customers specific rules on the maturation of meat will have to be followed – please enquire with our Farm Butchery Team.

BEEF
Ensors are able to slaughter and butcher meat up to 30 months of age & over 30 months of age as standard. We are also able to slaughter beef animals over 48 months of age – subject to prior arrangement.

BOOKING IN LIVESTOCK FOR PRIVATE SLAUGHTER & BUTCHERY

All Livestock delivered to us must be booked in by prior arrangement
All stock must be moved off a registered holding which also has a registered herd or flock number (as applicable).

BEEF

  • All cattle delivered to us must meet tagging regulations.
  • All cattle delivered to us must be accompanied with its passport
  • We need to know if the animal is over 48 months of age prior to delivery as these cattle are subject to additional testing.
  • PLEASE NOTE: It is illegal to send cattle to an abattoir that were born before August 1996.
  • All Cattle must be accompanied by any relevant Food Chain Information

PIGS

  • All pigs must be identifiable by either a METAL Ear tag, Tattoo or Slapmark (please note that eartags are sometimes lost in the slaughtering process so we will also apply a company slap mark to pigs to ensure its continued correct identification).
  • All Pigs must be accompanied by a DEFRA Pig Movement Form and any other relevant Food Chain Information.

LAMBS

SPECIAL REQUIREMENTS
Please let us know in advance of their arrival if your Livestock are:-

  • Organic
  • Farm Assured
  • Freedom Foods
  • Or have special requirements for handling i.e. Long Horn Cattle.
  • Any accredited or certificated livestock will need to be accompanied by a copy of their certificate &/or registration number to prove authenticity. i.e. FAWL Certificate & No, Organic Certification & No. etc.

Butchery Instructions should be emailed to Farmbutchery@ensors-ltd.co.uk on the day your livestock is delivered to the abattoir or handed into the Procurement Team on the day your stock is delivered.
